ok, this chart could be altered by a ton of things, and I have found that I average(am rounding here) 1 unit less than what the chart shows

I don't see where anyone mentions if you have to conquer the village in one attack. What if you are say, building an have no available population to increase army size, but plenty of resources, so you decide to send a force at the village, but not enough to take it. Will you kill some of the troops there, and be able to go back later to kill the rest, or does it regenerate them?

Yes, it is possible to conquer a farming village with several attacks ;-)
